In a mixing bowl, combine all sauce ingredients.
Cut chicken breast into strips, and marinade in the sauce for 5-10 minutes.
While chicken is marinating, cook soba noodles according to package instructions.
Drain cooked soba noodles and rinse under cold water to wash off excess starch.
Heat up olive oil in a skillet over medium heat. Add chicken and cook until slightly brown.
Add julienned vegetables to skillet and cook for 3-5 minutes. Stir often and add a little bit of water if needed, 1 tbsp at a time. You want there to be a little bit of sauce but not like a stew!
When vegetables are cooked, turn off the heat and add soba noodles to skillet. Toss until everything is combined. Serve and enjoy!
