Preheat the oven to 200°C / 400°F and lightly grease a nonstick baking sheet.
Grate zucchini using a box grater.
Place grated zucchini in a bowl and sprinkle with salt. Mix and leave for 5 minutes.
Transfer zucchini to a clean tea towel. Wrap it up and squeeze out as much liquid as possible. Discard the liquid.
In a large mixing bowl, mix together zucchini, egg, oat flour, shredded cheese and all the seasonings until combined.
Take a large spoonful of mixture and shape into a patty with your hands. Repeat until all mixture is used.
Arrange fritters in one layer on the greased baking sheet. Spray the top of each fritter lightly with cooking spray.
Bake for 10 minutes, flip, then bake for 10 more minutes or until golden brown on both sides.
Top zucchini fritters as desired and serve immediately. Enjoy!
