1/8 tsp ground cumin
1/8 tsp oregano
1/4 garlic powder
2 tsp fine sea salt
1 tbsp brown sugar
Preheat the oven to 300ºF / 150ºC and line a baking tray with parchment paper.
In a large mixing bowl, add egg white and whisk until foamy.
Whisk in all the spices and seasonings.
Add raw nuts and mix until everything is evenly coated.
Transfer nuts to lined baking tray. Arrange them in a single layer. Bake for 15 minutes.
Take nuts out of the oven and give everything a stir. Reduce oven temperature to 250ºF / 120ºC and return nuts to the oven for another 5 minutes or until golden brown.

The nuts will keep in an airtight container in a cool and dry area for up to 2 weeks.
The egg white allows the spices and seasoning to stick without the need for additional oil. Don’t skip it!
For the nuts I used a mix of almonds, macadamia nuts, cashews and petitas, Feel free to use any nuts or seeds that you like, just make sure they are raw.
Feel free to replace brown sugar with any granulated sweetener of choice.
