These quick and easy mini pizza zucchini bites have all the cheesy goodness of pizza without the carbs. Perfect for parties or a fun weeknight dinner!

1 large zucchini
50g pizza sauce
80g shredded light mozzarella cheese
Toppings (optional)
-Diced green bell pepper
-Diced pitted olives
-Mini pepperoni
-Shredded basil
Preheat oven to 200°C / 400°F.
Slice zucchini into 0.5 inch slices.
Arrange zucchini slices on a nonstick baking sheet in a single layer. Top each slice with pizza sauce, shredded cheese and desired toppings.
Bake for 8 minutes or until cheese is golden and bubbly.
Remove from oven and serve immediately. Enjoy!
Notes
Use large zucchinis for this recipe otherwise you won’t have enough surface area for the toppings. Alternatively, you can slice the zucchini diagonally to make the slices bigger.
Feel free to switch up the toppings! Other ideas include: lean ham, chicken, mushrooms, tomatoes, red onion.
If you can’t find mini pepperoni, you can just cut up regular sized pepperoni. Use a metal smoothie straw or small round cookie cutter to cut out perfect circles.
These are best eaten fresh but they can be kept in the fridge for up to 2 days and reheated in the oven before serving.
