These moreish bite-sized cucumber bites take inspiration from California roll and are filled with crab meat and avocado. Impress your friends at your next gathering by serving up this quick, easy and fancy snack!

1 cucumber
1 avocado
200g cooked crab meat
1/2 lemon, juiced
4 tbsp Kewpie mayo
2 tsp Sriracha
-Salt, to taste
-White pepper, to taste
1 tbsp furikake
In a bowl, mix together crab meat, Kewpie mayo and Sriracha until combined. Season to taste with salt and white pepper.
Slice cucumber and avocado.
Place 2-3 slices of avocado on each cucumber slice. Squeeze lemon juice over each one.
Top each cucumber slice with crab mixture. Sprinkle furikake on top. Serve and enjoy!
Notes
Try to use fresh or frozen (defrosted) crab meat if you can. Canned crab meat will also work in a pinch but won’t look as nice.
Feel free to adjust the amount of Sriracha according to your spice tolerance.
If making ahead of time, prepare everything as instructed but save furikake topping for the last minute so it doesn’t get soggy. Store covered in the fridge for up to 6 hours.
