This strawberry chia pudding is delicious and nutritious! It can be prepared ahead of time so you can have breakfast ready to go on a busy morning! It's also a great snack in-between meals too.

4 tbsp white chia seeds
250ml almond milk
10-15 strawberries
1 tbsp maple syrup
-A handful of blueberries
-Sprinkle of desiccated coconut
Combine chia seeds and almond milk in a jar or a big bowl and mix well.
Cover and refrigerate for at least two hours or overnight.
When ready to serve, prepare your toppings and the strawberry puree. Dice 4 strawberries, and puree the rest of them with maple syrup in a food processor or using a stick blender.
In two serving jars or bowls, spoon in chia pudding, strawberry puree, and top with diced strawberries, blueberries and desiccated coconut.
Notes
You can use any milk you like in place of almond milk.
Substitute maple syrup with sweetener of choice.
You can make the chia pudding and strawberry puree ahead of time but just be sure to store them separately.
Chia pudding will keep in the fridge for 5 days. Strawberry puree will keep for 2 days.
