This beautiful purple chia pudding takes inspiration from the popular Asian drink taro milk tea. Made with non-fat dairy and no sugar, it’s a healthy and delicious treat to have as a snack or dessert for when that boba craving hits!

Ingredients (2 servings)

3 tbsp white chia seeds
180ml non-fat milk
5 drops taro extract
3 tbsp monk fruit erythritol sweetener
1/4 tsp vanilla extract
200g non-fat Greek yogurt
1 tsp sprinkles (optional)
  1. Combine chia seeds, milk, taro extract, vanilla extract and monkfruit erythritol sweetener in a bowl or a container with a lid. Mix thoroughly. Refrigerate covered for at least 2 hours or overnight.
  2. When ready to serve, transfer half of the taro chia pudding into a mixing bowl. Add half of the Greek yogurt and mix until combined.
  3. Into each serving glass or jar, carefully spoon in a layer of the taro chia pudding. Followed by a layer of Greek yogurt and taro chia pudding mixture. Finally, top with a layer of plain Greek yogurt. Garnish with some purple sprinkles if desired. Mix well and enjoy!
Notes
  • Black chia seeds will also work for this recipe however the color won’t turn out as pretty.
  • If you don’t like sprinkles, you can also garnish with a dusting of taro powder, blueberries or purple edible flowers. You may even top it with some instant sugar-free brown sugar pearls if you like!
  • Feel free to substitute monkfruit erythritol sweetener with any other sweetener of choice.
  • For vegan or dairy-free, substitute Greek yogurt with coconut yogurt, and milk with soy or oat milk.
