carrots
1 tbsp
olive oil
2 tbsp
honey
2 tbsp
balsamic vinegar

Salt, to taste

Pepper, to taste
Preheat oven to 400°F / 200°C.
Wash and dry carrots. Cut into halves lengthwise.
In a small bowl, mix together olive oil, honey, balsamic vinegar, salt and pepper until combined.
Transfer carrots to a nonstick baking dish. Drizzle balsamic mixture all over, and toss to coat evenly.
Roast carrots for 40-45 minutes, flipping once halfway. They are done when tender and the glaze is nicely caramelized.
Optional - sprinkle chopped
Tamari Almonds
on top. Serve immediately. Enjoy!
Notes
If your carrots are very large, cut them lengthwise into quarters instead.
Vegans may substitute honey with agave syrup, dandelion honey or a vegan honey substitute.
Make sure you use a good quality balsamic vinegar for this as it will make a huge difference in flavor!
