700g carrots
1 tbsp olive oil
2 tbsp honey
2 tbsp balsamic vinegar
-Salt, to taste
-Pepper, to taste
Preheat oven to 400°F / 200°C.
Wash and dry carrots. Cut into halves lengthwise.
In a small bowl, mix together olive oil, honey, balsamic vinegar, salt and pepper until combined.
Transfer carrots to a nonstick baking dish. Drizzle balsamic mixture all over, and toss to coat evenly.
Roast carrots for 40-45 minutes, flipping once halfway. They are done when tender and the glaze is nicely caramelized.
